what one should I have it on?

how are the speakers mounted?

Off axis = installed in doors at a 45* angle to your ears
On axis = installed aimed directly at you, e.g. in kickpanels or a-pillars
Diffuse = not sure about this one, maybe for stage heightening tweeters when you run several sets?
When speakers are mounted off axis in your doors, they tend to roll off in higher frequencies. So the off axis setting will make your tweeters louder in the highest frequencies, thus making it sound flat. However when put on axis (aimed towards you), this makes them sound too bright. In this case you would want the on axis setting.

I also agree diffuse would be if you were to mount the tweeter in a different location/phase then the woofer.
All this should do is slightly adjust the phase of the signal between the woofer and tweeter. This will make minor adjustments to the sound while not actually hurting anything so see if one setting sounds better to you then the others and use it.

Diffuse would likely be a 180* phase shift, off axis is likely just less padding of the tweeter, and on axis is what was voiced from. That would be my assumptions being in the speaker business.
